How well do you know these people? Are either of them diabetics, vegetarians,with allergies? It seems to me that so many people these days have a particular food thingie so be sure to ask.

How about a sitr fry that's done in your own large skillet.  Use either cut up chicken breasts in small cubes or filet mignon steak cut up.  Add cut up red pepper, onion, add the thinly sliced carrot, sliced mushroons.  Serve over white or brown rice.  I personally never liked brown rice.  You use a little extra virgin olive oil in your skillet, add meat and salt & pepper and add veggies and salt and pepper.Cook on med. to high heat.  You can also add cut up broccoli if you like it.  The prep time for cutting up veggies and meat takes 10 minutes or so.  Use two skillets, if needed.  Serve lemon merguine (sp?) for dessert orf something on the lighter sideCat Very Happy

Make chicken parmigiano......simple and delish. Lightly fry breaded chicken cutlets, thin sliced. Then bake with marina sauce and mozzarella. Add any side you you like...can be pasta tossed with the sauce, or fried zucchini, potato croquettes.

Here's my simple but delicious recipe for beef stroganoff:

                   

Beef Stroganoff

1 1/2 lbs. top round steak, cubed

1/2 cup chopped onion

3 TBSP butter

2  cans (10 1/2 oz.) Campbells condensed beef broth

1 3/4 cups water 

1 TBSP worcestershire sauce

1 small can sliced button mushrooms

1 cup sour cream

1/4 cup flour

prepared buttered egg noodles

 

Saute beef cubes and onion in butter until browned.  Add beef broth, water and worcestershire.  Add mushrooms (drained).  Cover and bake at 300 degrees for 2 hours or until beef is tender. Combine sour cream and flour.  Take beef out of juices and set aside.  With whisk, stir sour cream/flour mixture into juices and cook 5-10 minutes on stovetop until sauce thickens.  Return meat to thickened sauce (gravy).

Serve stroganoff over noodles, sprinkle with parsley. 

Serves 4
