Need Rec's For What To Cook?

I have invited a couple over for dinner next week.  I don't cook very much and want something that's a hit, yet not over the top and rather simple to put together. 

 

Can anyone give me suggestions on food (main dish) that's a hit when you invite someone over. 

 

Any suggestions are welcomed and thanks!

Roasted chicken and veggies  It is simple and elegant and once in the oven, you can do other things.  Here are four recipes.  Ina Garten's recipe from Food Network has the veggies included in it, but you can choose veggies you like.

Seafood Spaghetti

Ingredients

  • 150g (6oz)
  • 1 tbsp olive oil
  • 2 garlic cloves, peeled and crushed
  • 1 red chilli, deseeded and finely chopped
  • 100g (4oz) cooked and peeled prawns
  • Salt and freshly ground black pepper

Instructions

  1. Cook Spaghetti as per instructions on pack.
  2. Heat olive oil in a large pan and gently fry the garlic and chilli for a few minutes.
  3. Toss in the Spaghetti and prawns and heat through. Season to taste and serve immediately.

Don't forget to add a tossed salad with romaine as the lettuce and ask their prefer dressing so you can toss the whole salad in it. Let it sit a bit before serving, as it makes a difference. I toss in my croutons and bacon piece on top before serving so they don't get soggy.

Pot roast...........you can do this ahead in your slo-cooker.......and it's always tender.

I love to make a very simple beef stroganoff...it cooks in the oven on low for 2 hours and is very tender.  I serve it over buttered egg noodles, baby peas and shallots on the side, and dinner rolls.

You could do a bone-in ham. Just put it in the oven, and use an oven bag. If you have an Aldi's nearby, they usually have the best prices on bone-in hams. Then whatever sides you want, maybe potatoes (roasted, mashed, baked), and vegetable.

spaghetti and meatballs. Serve with a simple tossed salad and garlic bread.
