I love enchiladas and am looking for an enchilada recipe. I've searched extensively on the internet and have made quite a few, but can't come up with one that I've had in some Mexican food restaurants.

The one I want has chili powder in it, and doesn't have a strong tomato taste. It's almost a caramel color.

Can anyone help?

My mom always used las Palma's Chile sauce, thickened with a little flour to dip the tortillas in. They were delicious !

Make a rue like for gravy, add chili powder and cumin, slowy add chicken stock to your desired thickness.

Enchilada Sauce

2 T oil

2 T flour

1 T chili powder

garlic powder, salt and pepper to taste

1 c of chicken broth ( I just use the can broth)

In a saucepan, put the oil, flour, and chili powder, garlic powder, salt and pepper.

Stir and cook a little to get rid of the raw taste of the flour. Slowly whisk in the chicken

broth to prevent lumps. Add a little more chicken broth or water if needed. Recipe can be

doubled. Enjoy!!!

I made homemade carnitas today, and still want more Mexican food. Will have to make enchiladas !!! I knew I needed to find my recipe for the sauce. Glad you needed it!!!

We buy Trader Joe's enchilada sauce. It's so good.
