Mold on hummus

Sometimes when I buy hummus and leave it in the fridge for a couple weeks after opening it, an orange oil forms on the top. It looks like oil but I'm wondering if it's a type of mold or if it's the spices in it turning to oil. So I end up throwing it out thinking it has gone bad. Does anyone know what the orange stuff is?
