Another great flavor mix is fennel and cumin. I make a mix of this with a little salt and use as a rub on chicken or pork before grilling or baking. Wonderful flavor.

Thanks so much for all the input and ideas! Beach-mom, I will definitely try that recipe - thanks for putting it on here. I actually picked up some of the McCormick's cumin to use (before reading about Penzey's). I used it in some homemade enchiladas and I do like how it changed/amped the flavor. I do think I'll end up ordering some of the "good stuff" though now that I know a bit more about it.

Definitely looking forward to expanding my use of this spice with other meats/soups, etc.!

I also just discovered cumin a few years ago and now I can't live without it.......it adds a good smokey flavor.......another level to your taste buds........
