OMG I could kick myself for avoiding this for so long!

I made my New Years cabbage rolls, and I always have them with mashed potatos. Well, I'm on a low starch diet and potatos aren't on it. I can have a small amount, but hey, once I start I can't stop, so better to just avoid.

Well, I decided to try making the cauliflower version - faux-tatos. What did I have to lose right? They are wonderful. I tested making a small batch at lunchtime. I sort of over cooked them in the microwave, so they browned a bit on the edge, but after mashed good with butter, sea-salt and pepper they were wonderful. They made the perfect bed for my cabbage rolls.
