Does anybody else do this and, if so, have any recipes you enjoy?
My only rules are no yogurt or stuff like that - I have just been making ones that use fresh fruit, maybe a little sugar...
A short while back I found a recipe online for Watermelon Raspberry ice pops and made those. They are pretty good. The husband absolutely loves them.
I am currently making one that is Cherry Lime. My next door neighbor has a massive cherry tree (best cherries I've ever had, too!) and he tells us we can have as much as we want. So the husband was in town last week and got me quite a few.
This recipe is cherries, lime juice, a little sugar, and a little water. Cook it up, let it cool, then into the blender and pour into your ice pop molds. It's cooling now and it tastes pretty good - a little tart...a little sweet.

Before I did the cherries, I looked around online to find out about the best way to pit cherries. I looked at the various cherry pitters and saw a lot of stuff I didn't like, such as that they are really messy. So I searched ways to do it without the tool.
I decided on the 'funnel in a bowl' method and it worked great. No mess, except on my hands (wore surgical gloves). But no splashing or anything. Just put a funnel, with the small hole the size of a cherry pit, into a bowl (I chose a bowl I have, with a spout and handle, that was an inch or so higher than the top of the funnel) with the small hole up, and push the cherries into the top of the funnel. ![]()

I mostly just use juice. Grapefruit is one of our favorites.

I have a set of the Tovolo molds (BPA free) and I make pops out of carrot-celery-apple-lime juice. Or any veggie juice I'm currently drinking. I also use coconut water (Goya for example) and blend it with bananas, esp the overripe ones. I also use Goya juices for any sort of base with summer fruit like peach or strawberry. Cucumber-honeydew with lime is another fave.
I love these for dessert or a snack or for evenings when I'm too whipped from work to cook.

Wow, why didn't I think of the idea of just using juice? d'oh! Thanks!!
I have looked a lot online and came up with very few, which is why I was wondering if others had ideas or recipes that they enjoy.

I love ruby red grapefruit juice. Maybe that would be a good one for me.
The coconut water and bananas sounds really good, too! I have the same molds you have, Campion. They are somewhat on the large size, but I really like them. They are easy to use and easy to clean and store.
I just got all my cherry/lime popsicles finished and in the freezer. Oddly, the recipe said to put it through a sieve. About 20 seconds in the Vitamix and it was smooth as silk, so no sieving for me. ![]()

I like to use juice too. I put them in plastic ice cube trays and then use them in my Ninja to make a slush.

I have several cookbooks of recipes; they're called ""Paletas"" in Mexico. Some of the pops are very beautiful and very unique!
I got similar molds at BBB for under $5.
