Making corn relish-any tips?

I love the corn relish my local store sells. It has a bit on jalapeno pepper to snaz it up. Between the vinegar, sugar and jalapeno, the lack of salt wont be noticeable for my no added sodium diet.

2 questions:

1. Do you agave syrup would work just as well as sugar?

2. I am finding 2 types of recipes: one is an uncooked version, one simmers an hour in the seasoning. Have you tried the cooking method? As I look at the store bought, there is some cooking since the onion is transparent.
