I started to make my usual sourdough bread. I realized after a moment or two that I had accidentally turned over the page of my recipe. I had put in too much water and too little flour. Also too much yeast. I fumbled around adding flour and starter and other ingreds. for my usual bread. In the process I realized what my mother-in-law meant about the dough 'feeling right'. I just kept on adding flour until it did feel right. I turned out to be my best sourdough bread ever. I always thought recipes should be followed exactly to the letter. This one was all wrong but turned out wonderful.
