I will make dinner one night with left overs and then skip a day before I eat the leftovers.  Two times is my limit.  I make soups to freeze in individual portions and I will also occasionally make a meat loaf and freeze half because what I really want is the meat loaf sandwichs.

I can't just make a small pot of any kind of soup so I freeze some for quick meals right away and we eat on the left overs for a couple of days.  We are both semi retired so we can't afford to be too picky. 

 

Other than soup I try to make meals that will be eaten at one sitting.  I will make stir fry out of left over chicken or pork. Sometimes I will make pot pie out of chicken or beef if there is enough left over.

 

If I cook a pot roast with carrots, celery and potatoes I will add some peas and make stew with those leftovers.

The only leftovers that we have are soups and desserts,An extra day and they disappear quickly.We are not fond of fridge clutter! Hello Gloria! Hope all is well.
