  • 1/2 cup walnuts, finely chopped
  • 1/4 cup bread crumbs
  • 3 tablespoons butter, melted
  • 1 egg white
  • 1 egg
  • 12 ounces Philadelphia Cream Cheese, divided (8 ounces and 4 ounces)
  • 4 ounces Gorgonzola cheese
  • 3/4 cup sweetened cranberries, roughly chopped
  • 4 ounces to 6 ounces (to taste) pancetta, chopped to small dice
  • 1 cup candied walnuts

  1. Mix finely chopped walnuts, bread crumbs, melted butter and small egg white. Using two non-stick (or buttered) 12-count mini muffin pans, add a heaping teaspoon to each muffin tin pressing down firmly. Bake in a 350 oven for about 5 minutes, until lightly brown.
  2. On the stovetop, over medium heat, sautee the pancetta until crisp. Remove from pan and set aside to cool slightly.
  3. Blend 8 ounces Philadelphia Cream Cheese, 4 ounces Gorgonzola and egg until smooth. Fold in the pancetta and cranberries.
  4. Divide cream cheese mixture between the 24 mini muffin tins. Bake in a 350 oven for 12-15 minutes, until slightly puffed.
  5. Cool the mini cheesecakes for about 5 minutes and top each with a small dollop of the remaining Philadelphia Cream Cheese and press a generous amount of candied nuts on top. Enjoy!
