Just got my Vitamix...questions?.....

Just received mine today and am testing it out. So far made the Sweet Green Smoothie with Cucumbers, Strawberries and Spinach...very good!

Some questions for those of you who've had yours and been using a while...

The one drawback I see in this vs. my blender...my blender has many settings, like puree', frappe, (as well as chop, grind etc.).... It seems the Vitamix will only make one consistency for liquids, emulsified. I miss the smoothies coming more frothy. Is there anyway to make them that way? (without adding ice cream or whipped cream) All the drinks seem to come really liquidy & pureed.

It also seems in the video, when chopping onions, cabbage...you can only chop to a slaw- like consistency, no matter how "chunky" or fine you do it, and for many recipes I want less of a "mushed" chop. Is the chop feature more for slaws & salsas only? I can't see using the onions so emulsified chopped in soups..

Last, what other appliances or gadgets do you find this replaced for you?....blender, food processor, choppers?

I have a small condo kitchen and keep gadgets and appliances to a minimum, but this seemed good to replace my old blender, and because I was interested in making a lot of healthy smoothies on the go (not just the fruit kind I've been able to make in my blender but with veggies etc), and soups. Also all the other things they suggest. But wondering if I should still hold onto my blender or at least my small food processor, for other consistencies?

Except for the same liquified consistency for everything, I do love the recipes in the book, and I needed a good smoothie cup, so I appreciate that too. Easy to use and clean, and am impressed with the info in the book.
