Re: It's August - Whats Cooking???

Thanks, Spix. Just had a totally unexpected melt down on the phone with VA. Trying to get ambulance fee of $1,200 paid. It keeps getting bounced back and forth with me in the middle.

Made Apple Bars on Sunday. Haven't made them in years and years. So good. I can't keep out of them. Will start giving them out to friends. It makes a jelly roll pan, so have plenty.

Snowy Glazed Apple Squares

2 1/2 sifted flour                       8 med. tart apples, pared and sliced (3 C.)

1/2 t. salt                                  1 C. sugar

1 C shortening                          1 1/2 t. cinnamon

2 eggs, seperated                     GLAZE

Milk

1 1/2 C crushed corn flakes(I didn't use)

Combine flour and salt in a bowl. Cut in shortening until mixture is crumbly.

In a measuring cup, beat egg yolks with enough milk to make 2/3 C.

Add to flour mixture and toss lightly.

Divide dough almost in half. Roll larger portion to fit jelly roll pan. Sprinkle with corn flakes. Spread apples over corn flakes. Roll out remaining dough and place on top and seal edges (if possible)

Beat egg whites until foamy; spread on crust. Bake 350 for 1 hour. Cool and spread on glaze.

GLAZE combine 1 1/4 C confectioners sugar, 3 T water 1/2 t. vanilla. Mix till smooth.

Combine sugar and cinnamon; sprinkle over apples. Roll out

Re: It's August - Whats Cooking???

HI  Soushi, glad to see you here - am going to try the recipe you left for us Looks mighty good.

It is difficult at best when we lose someone but it often does not end at that. Experiencing problems like you did Soushi, can also be way too common and most difficult to deal with. We had some similar problems when Mother passed away - biggest problem was with SS - they kept saying she died a month before she did. Took 6 months to get that straightened out - sure am glad I knew the young woman who managed the SS office nearby - finally asked for her help and it got straightened out quickly. This impacted payment of bills too. Hope you have it straightened out. No one needs those things to deal with also.

Suppose to warm up again today and tomorrow and then the weekend will be quite a bit cooler and then TRIPLE DIGITS AGAIN for the beginning of next week. Does this ever stop? Yep, eventually it does. This has been a miserable summer - a lot like summer before last.

The house was very calm yesterday. Ricky went to stay a few days with his "Auntie" he loves going there but they cannot go outside as snakes are everywhere. They have a huge piece of property and Ricky loves to run all about - he cannot do that now. He will NOT like that. Shannon was not here so it was me and the little girl doing the day and Davey was in school. I was very relaxed, breathing was a lot better and i got some of the junk sorted - not nearly enough but at least was able to get some done as I have not been able to do it for months and just trying to find an empty spot in my room to take a step in has been a nightmare. Does not look like I did much but yes, a lot got sorted out. Also got a couple loads of clothes done. Speaking of that still must redo my clothes line - more and more is breaking. Got some replacement line but it has been just too hot to stand out there and work on it. Maybe this weekend, maybe not as Ricky and his grandmother both will be back. LOL.

We had leftovers last night as there was plenty left - this was the roast and veggies. Still a lot left there - well am beginning to think that Davey's Mom is one of the biggest culprits in eating all the food - not just her son.

Hope one and all have a great day and of course eat well.

@Winifred  OMG!  I could not live in a place like that.  Are they out in the open so they can be seen from the house, or in the woods and this is the season they are out, I can only imagine, shudder, shudder.

Re: It's August - Whats Cooking???

Snakes LOVE to sunbathe so yes and no if you can see them, etc. Sometimes they are all about and other times they are sneaky, hiding in the bushes or camouflage. Bottom line if you live near outside areas - by that I mean a lot of acreage with NO HOUSES - you will have snakes. We use to see them here - I am on over an acre and right by a Wash - but have not seen any in years and  years. That does NOT mean I do not still look around. Course the advantage I have is no grass, etc  drought played a number on me - boo hoo - just a weed here and there. There is still grass in the area where most of the roses are. Strange. Where Ricky is there are several outbuildings, trees, some bushes and they are in an area that has not been hit like we have been with no weeds/grass. They use to have a super green yard but no more - well so did I but I now mostly dirt - they do not. Am a bit jealous of them.

Got hot here this afternoon - went to Aldi's and bought a HUGE pizza. Never have had one that big - I LOVE their food. STocked up on meat, chicken breasts, boneless pork chops, other things and they had a $10 coupon off if you spent $40 - worked for me. So I spent $70 after my $10 coupon off - I really liked that. Their food is so good. The Aldi family started Trader Joe's - that's a big clue as to how good their food is. They have been here now about 3 or 4 months. Put the little girl up in the basket sitting up - she was thrilled - loved watching her face. The has been in grocery carts before but always in her car seat. We decided to take her in and sit her in the basket - yes we have one of those covers but I have not yet mastered the correct way to put it on. LOL. She was in heaven.

Yes, I did fix that pizza now to figure out what I will do with all that is left over - guess I will wrap it in foil - nothing else to do. Good dinner for sure.

Hope one and all had a great day. Also stocked up on their delicious cinnamon and rain bagels - best I have ever eaten.

@Winifred  I have never heard of a rain bagel.  As for the sn---s, we do have them here, being in the hills on over an acre, but havn't seen one in a while, and hope to not see.  When I had many cats, they would find them.

Once, while I was on the phone, I looked out my slider and there was one of my cats with one in her mouth, shudder, shudder, well I screamed like crazy,  went outside, and chased her until she dropped it.

Another time, I was watering some roses in the driveway, and another cat brought a dead, curled up one, and I dropped the hose and ran, lol.  There were quite a few incidents with different types, I am sure all harmless, and the biggest were the gopher ones.  When we bought this house, I did not know these were around.

I prefer furry critters. Smiley Happy

I remember when I would push DD around in a cart, at the market and at the garden center, where she lost my car keys one day, probably dropped them into a potted plant, lol, but fortunately, I had a separate opener in my purse and a key in the car.

There is nothing like a baby's smile and laugh, the best ever. Smiley Happy Smiley Happy
