Is there an easy way to roast chili peppers?

Can anyone offer tips on roasting chili peppers?

When I make mine, I have trouble getting the charred skin off. Some areas are soft & come off easily. And some spots fight me. I've tried covering them in a bowl with plastic wrap to soften. Still having trouble.
