Ack! Am I losing my mind?  I could have sworn that yesterday someone on this thread described cooking cut up chuck roast (and she specified chuck) in her Instant Pot then shredding it and adding BBQ sauce. I bought chuck today and came back to double check exactly what she did and now I can't FIND it.  So frustrating!

@SharkE Taking a break this a.m. from being a "domestic goddess" i.e. doing housework and on page fifteen of Meredith Laurence's book One Pot Comfort she mentions always using thawed meat, browning first and using the natural release method for it in order to obtain tender (and by implication thoroughly cooked) results.

 

Got the book a while back but have only started perusing today as a reward for making good progress on my deep cleaning for fall in order to be ready for the upcoming holidays.  ( I was "up and at it" quietly at four o'clock.)

 

I hope you continue to have fun with your Insta Pot!  I'm going to cook a chuck pot roast later today in my regular Cooks Essentials pressure cooker.  Don't have an Insta Pot . . . yet.

Thank you both SO much. No wonder I couldn't find it - wrong thread!  Right now I'm eating a sandwich with leftover shredded BBQ beef.  I finally looked up a recipe online yesterday. Woman Wink

My guess is it was the bird - I once bought a CASE of chicken breasts at a great price.  They were huge!  I was so excited Smiley Happy ......... there was nothing I could do to those dang things to make them tender enough to eat.  I ended up throwing out half of them after giving up on trying to cook them.  So tough and stringy!
