If you baked a cheesecake today...

Today is Wednesday and I'm baking a cheesecake for Christmas Eve, which is Sunday.

 

If you baked a cheesecake today would you refridgerate it until Sunday or freeze it?

I think 5 days is pushing it for quality. I would freeze, then pull out a day or 2 before serving. Thaw in fridge.

@justashopper :  Ditto - freeze it so as not to be tempted (and hopefully keep crust from getting soggy).

@house_cat - Is there any way you could delay baking? I'm not sure you're going to be happy with the results if you bake today. If you could bake tomorrow in the afternoon or evening, or on Friday, the cheesecake would be fine in the fridge—per a quick check of reliable resources online, it should be good for up to four days. (And FWIW, I always allow my cheesecakes to chill and "bloom" for at least 24 hours before serving.)

 

But if you bake it today, wait for it to cool, and then wrap and freeze it, you're probably only going to get about 48 hours of freezing time before you'll need to start thawing it in the refrigerator to make sure it's fully defrosted, and this short back-and-forth process could definitely affect the texture; the cheesecake may not even have frozen all the way through in two days.

@house_cat Bake it, allow it to cool completely, wrap it well, and freeze it.  Depending on the time you need it, give it a couple of hours on the counter, to thaw on Sunday.  You can also stick it in the fridge Saturday night and allow it to thaw overnight,  Check it Sunday morning to see if you need to set it out for a little while.  

I made a cheesecake on the 8th, froze half of it until this past Sunday, the 17th.  It was still perfect, as if it were freshly made.

Life Love and Sugar.com is my go to for anything cheesecake...she says

 

The cheesecake should be well covered and refrigerated and consumed within 4-5 days

 

You are borderline....but I make a ton of cheesecakes and they do freeze well....

Thanks for all the responses. You have confirmed my original hunch and I've decided I'll freeze it once it's cooled.

That's what I LOVE about cheesecakes!

 

It IS such a make ahead dessert it frees up your time on the day of!
