We tasted this at Costco and it was very good. I bought a package and now would like rec's for how to use this meat. I'm thinking soft tacos.

Soft tacos are a good start. Not sure what brand you got, but we like Del Real Foods Carnitas, they always have good recipes on the package and their website has even more, so far we have liked every recipe we have tried and you can substitute the carnitas for any of the recipes. This will take you right to the recipes, you can look through them or type carnitas in the search box http://www.delrealfoods.com/recipes
We have used carnitas in soups (like pozole), stews, enchiladas, casseroles and stuffed bell peppers.

Hi tkins,
The brand at Costco is Comida Del Sol. They were giving out samples with a dollop of guacamole on it. Really good! Nicely spiced.
We're novices at Mexican dishes, so the ready-made carnitas is a nice start.
