This is going to be our first Easter without a spring/theme type cake.  My grandson's first birthday is tomorrow and we had his big family party this past Sunday with lot's of cake and ice cream. 

So for Easter doing a buttermilk pie and peanut butter pie. Thinking of either a no-bake cheesecake or brownies as well. 

That birthday cake with blue icing made my grandson look like a Smurf.

I always make a pound cake from scratch. The taste is worth the extra effort.

I was surfing the internet for a dessert I could serve in jars or glasses and came across this picture from Taste of Home.  I had almost forgotten the Russian Cream Dessert.  It so so light and delicious.  If I can find some nice raspberries (Driscoll) this will be my pick.7BF44DCD-EC90-40F6-932B-05958B6E7AEF.jpeg

 

If I fail in my raspberry quest, I think I will make this creamy lemon parfait dessert from LemonsForLife

deeva. if you dont mind could you share the recipe? i tried to make a pound cake once and it came out no dence and heavy.

rrpell those look really good. we like taste of home cook books. we have like 4 or 5 of there cookbooks. my wife has gotten alot of good recipes out of there books.

I found this easy no bake pie recipe today for pineapple pie. 

 

A graham cracker crust

 

Mix together   20oz. Can of crushed pineapple ( undrained )

(1). 3.4 oz. pkg. of instant vanilla pudding

8oz. Sour cream

 

Spoon mixture into prepared crust, and top with shredded coconut.

 

Refrigerate for 2 hours 

 

Serve with whipped cream.

@Pooky1 : This is a very good and moist pound cake. The original recipe said to bake at 350* but in my oven the cake had an unbaked center and I bake at 330* and at 50 minutes insert tooth pick to check. The only other issue do not bake on rainy or cloudy day.

Cream Cheese Pound Cake:

3 sticks butter- room temperature

2 1/2 cups sugar

Dash of-salt

1- 8 ounce cream cheese- room temperature 

6 large eggs

3 cups sifted cake flour

1 1/2 teaspoon vanilla 

Cream butter, cream cheese and sugar until light and fluffy. Add salt and vanilla- beat well. Add egg one at a time and beat well. Stir in flour one cup at a time. Spoon into a greased 10 inch tube pan. Also, can bake in 4 loaf pans 8.5x4.5x 2.5 for 35 to 45 minutes. Cake freezes
