I am planning on making Easter Dinner, a simple one: ham slices, carrots, broccoli and mac n cheese.
But, I don't have a desert in mind. What are you all making for a simple desert. A lemon desert would be good or?

I am making a yellow cake (from cake mix but I add in extra egg, mayo instead of oil and milk instead of water as box cake calls for. I will make three 8-inch layers, make lemon pudding mix in the meantime. Once cakes are cooled, I will fill the layers with lemon pudding and then cover with a fluffy white frosting mix from Betty Crocker prepared according to box directions and sprinkle with coconut. I will place some pastel jelly beans atop it to give it an Easter egg look.
You could substitute Cool Whip instead of the fluffy white frosting if you choose and sprinkle coconut atop it just before you serve it. Or you could use whipping cream and you would need to add some gelatin mix to the whipping cream to make it last a little longer.
When in a hurry, I have purchased the Athens dessert shells and placed lemon curd into them and squirted cool whip atop them. I have made several different kinds if I had a large crowd. I have placed prepared coconut pudding mix in some, banana cream pudding mix in some and chocolate pudding mix in others. These are quick and easy ones.

Glorified Rice. It's white rice with cool whip, crushed pineapple drained , marisino cherries cut in half, and a couple of pinches of salt. Mix all together, taste, and chill for at least an hour or two.

Lemon Pudding Cake
1 stick butter + 2 tbsps.
1 cup flour + 2 tbsps.
½ cup chopped nuts (pecans or black walnuts)
1 tsp. almond extract
1 tsp. vanilla
Lemon zest
Mix with dough cutter and press on bottom of buttered baking dish.
(11 ¾ x 7 ½ x 1 ¾)
Bake @ 375 degrees for 15 minutes. Cool.
2 8 oz. pkg. cream cheese
1 – 1 ½ cups Cool Whip (from 12 oz. container)
1 cup 10x powdered sugar
Cream together and add to crust mixture.
Beat together until thick, and put this mixture over the cream cheese mixture.
Spread remaining Cool Whip on top.
Chocolate option: Instead of the lemon flavor, substitute instant chocolate pudding/pie filling . For the crust, omit lemon zest and add in instant coffee or instant espresso, pinch of sea salt.

Lemon cake with lemon cream cheese frosting
1 yellow cake mix
1/2 cup room temp. butter
6 eggs
1/2 cup whipping cream
1/2 cup water
1 Tbs. grated Lemon peel
bake at 350 in 2 buttered 9 inch pans for about 28 min.
Frosting
(3) 8 oz. pkgs. cream cheese
(1) 11 oz. jar of lemon curd
1 cup 10x sugar
2 Tbs. fresh lemon juice
1Tbs. grated lemon peel
beat till well blended
It’s lemony and delicious.🍋🍋🍋

I'm making a three layer carrot cake with cream cheese frosting and a cheesecake with chocolate ganache.

I'm making the following, this recipe was at my Weight Watchers mtg a couple weeks ago.
1 Sm box SF Lime Jello (substitute your flavor of choice)
1/4 c boiling water
2 Light Key lime yogurts (or substitute to jello flavor)
8 oz Fat Free cool whip thawed
1 graham cracker crust
In lg bowl dissolve jello in boiling water. With wire whisk add yogurt. Fold in Cool Whip. transfer to pie crust and refrigerate overnight.
A week after Easter is my daughter's birthday. I'll be making a strawberry cake, substituting Apple Sauce for the oil.
