How early can I prepare seafood?

I'm having a large Christmas Eve dinner that will be mostly following the tradition of the 7 fishes. How far in advance can I do things like stuffing raw shrimp with crab cakes or wrapping raw shrimp with prosciutto? I'm just trying to get as much done before tomorrow afternoon as I can. I hope someone else knows the answer, I'd be interested myself. I'm making a dish that my dad always made, linguini with mussels, scallops and shrimp in a red sauce. He can no longer cook, but he still enjoys eating it. I bought the mussels yesterday and my grocer said they were okay in the fridge until tomorrow as long as I left them uncovered.

I spent many years working in restaurants where they often prepped food for large gatherings and functions. I think it'd be perfectly fine to do your prep the day before, but no more than that. Sorry I didn't see your post earlier...maybe you're done by now.

Thank you for the replies. Unfortunately, I'm so NOT done...lol. I'm sure everyone here understands all the work that goes into getting the house ready, gifts wrapped, food bought, table set, clean the house (again).... Before you know it, it's almost midnight and you still have a long list of things to do. I guess the benefit is that I'm closer to Christmas Eve dinner so less time for the food to be prepped and waiting. Smiley Happy Merry Christmas to everyone!

As long as you refrigerate the items right after you prep, I don't see why it would be a problem to do it the night before. I'm thinking about bacon and scallops, for instance. They're going to be cooked the next day, right?
