When I cut up a large block or 5# log, I'll cut it in usable portions, wrap the portions in parchment paper, vaccum seal them, and put what I won't use quickly in the feeezer. Blocks and slices in use get wrapped in parchment and then in a freezer ziploc baggie. Shredded goes in a large mason jar or glass food storage bowl like Pyrex or Anchor Hocking.

I usually end up freezing most of my cheese because it goes bad before I can use it all. I've wasted so much. It doesn't changed the flavor but does change the texture, which is OK if you're cooking with it.

And in the freezer for up to 1 year if vaccuumed sealed.
Left overs I wrap in aluminum foil. Cheese stays fresh for weeks in the fridg!
I only eat pepper jack cheese because its spicy w/a little kick to it.

I do the same thing. I've had my Foodsaver for years. I put all my meat and the cheese after I use it in a Foodsave bag. I have no problems with cheese going bad.

I have some silicone, dishwasher safe, ziplock type, envelopes with wide bottoms (so they stand erect). I can verify they are leak and air tight 😬
They do cost, but worth every penny.
Hard to describe, but you can search for sizes.

We use up any cheese before it can go bad. But use a baggie for block cheese and a small green box for shredded parm. Very rarely I have to throw it out.
