Re: How do you make your salmon?

My favorite is equal parts dijon mustard and maple syrup   Then for the top pecans, panko bread crumbs and parmesan cheese.  Brush on the dijon and top with pecan mixture.  I bake fillets for 12 minutes at 425.

Re: How do you make your salmon?

@Laura14 - Salmon is such an easy fish to bake in the oven. When it is kept in the refrigerator, a salmon piece can be cooked at 375 degrees in the oven for 21 minutes. A frozen piece of salmon would take more time for sure-- about 5 extra minutes. You will know that salmon is cooked thoroughly by using a fork to "flake" the fish at the thickest portion of the fillet, and observing that the color of the salmon after being flaked a bit with a fork is a cooked-through, uniform, light pink, opaque color rather than a deep orange, glassy, raw-looking color. If you can flake it with a fork and see uniformity in color, it is done!

I season my salmon by placing a coating of olive oil on top, then add dried oregano, dried basil, black pepper, and half a lemon squeezed over that.

I even use more lemon after the fish is completely cooked and flakey. I love salmon with lemon. You can add a bit of salt, if desired, when the salmon is fully cooked.

I hope you enjoy it!

Re: How do you make your salmon?

I buy Costco's salmon Milano. It comes with a large dollop of herbed butter on each piece
I usually freeze the pieces and as I want some I cook from frozen. I make a sealed aluminum foil packet for each piece and bake at 400 degrees for 50 to 60 minutes depending on how large the piece is. Less time, maybe 20 minutes, if cooking from unfrozen. They come out moist and delicious. I sprinkle with balsamic glaze.

Re: How do you make your salmon?

Out on my grill with a little bit of McCormick salmon seasoning. I leave the skin on it and then remove that after it's done cooking. I like my fish well-done, firm and slightly on the drier side. No mushy fish for me.

I cook in oven 350 for about 15 minutes salmon topped with a balsamic vinaigrette capers thinly sliced lemon sprinkled with dill either dry or fresh.

Also buy the QVC Egg Harbor salmon so delicious and convenient.

First, I line my baking sheet with parchment paper.

Place the salmon skin side down (if you ever repurchase and it has skin).  Remove after baking.

Spray on avocado oil or brush on a little butter.  Season with a little lemon-pepper blend.  Sometimes I'll lay a lemon slice on top.

Bake at 375* for about 12-15 mins., depending on the size of the filet.  It should feel firm when you press it.

Serve with a lemon-dill cream sauce that I put together while the salmon is in the oven.

Re: How do you make your salmon?

We eat salmon 2x per week, so I have done it every way under the sun!!

Smoked with a mango salsa!  (I know many don't have a smoker)  That was my favorite way!!

I can no longer have mango (sugar), so I most frequently cook on a raised bed grill pan w/ lemon butter and whatever spice tickles my palette that day!

Re: How do you make your salmon?

I just put it in a frying pan on low heat with oil and butter and sprinkle with Old Bay.  I also start with skin side up and then flip and let it cook a little longer.  It seems to make it easier to remove from the pan with the skin holding everything together at the bottom.

My cousin does it on a grill with oil, honey, dijon mustard, lemon juice and S&P but I haven't tried this yet. Just thought that I'd pass it along as another option.

Re: How do you make your salmon?

I buy the skin-on salmon.  I line a small baking pan with aluminum foil and pat the salmon dry with a paper towel since I can never remember to take it out of the refrigerator early enough to dry out on it's own.

In a small bowl I mix together 2 Tbs soy sauce, 1 1/2 Tbs dark sesame oil (found in the Asian section), and 1 Tbs honey with a small silicone whisk,  I use one of those shot glass measuring cups and the honey comes out easier if I swirl the sesame oil in it before I pour it out.  I put this mixture in the small baking pan and lay the salmon on top if it FLESH side down and let it sit 5 or 10 minutes.

I flip the salmon over, sprinkle with sesame seeds, and usually add a drained pineapple tidbits cup spreading the tidbits around the salmon to soak up the marinade.

Bake at 450 deg F for about 12 minutes and then turn the broiler on to brown the top a bit.

The skin removes easily after it's cooked.  Just run a spatula or knife between the flesh and the skin.  Or, you can plate it with the skin on and the flesh will pull away as you eat it.
