This is the only way to cook it. All the grease drips out and the bacon stays flat and doesn't curl. You can cook it to the crispness you like too.


I used to use my George Foreman but now have a Todd English grill. Perfect bacon each time.

Rarely make it, but when I do, I use my cast iron skillet - stove top.

I love parchment paper! I use it to line cookie sheets when baking cookies. There's no need to grease the cookie sheet (or the parchment paper). Nothing sticks to parchment. You can reuse the parchment throughout a baking session; just leave the parchment paper on the cookie sheet and remove the cookies. At the end of the session, throw away that sheet of parchment. I also use it to line round cake pans.

When I make lasagna or any tomato-based casserole, I put a layer of parchment over the top, then cover with foil (if the recipe calls for cooking the dish covered). This way foil doesn't have a chance to interact with the acidity of the tomatoes.

You can use parchment in the microwave.

It is wonderful stuff! I think you can find it in any grocery store these days, in the aisle where foil and waxed paper are found. Reynolds makes a brand that is fine. There are other brands, too (but right now the one in my drawer is Reynolds).

It's not cheap, but a roll lasts a long time.

Typically, parchment comes on a roll. But it's also sold in precut sheets (that are flat and easy to use - you don't have to cut the sheets or flatten them out). I want to buy some of the pre-cut stuff. I think someone up-thread said that King Arthur Flour sells the pre-cut sheets.

Thanks peachesncream! I'm going to pick some up next time I go to Walmart. I remember seeing it near the foil, ziplock bags, etc.

Thanks again Chickenbutt! Also have to try the lasagna trick! Just love what I learn on these boards! For those interested, Costco has a large roll and I think it is only $5-6! Always surprises me that a large roll is so cheap, especially since Reynolds brand is about the same price for about a quarter of the roll.

Lots of great uses for parchment paper. I also use it for when I make my fudge. I never liked the idea of laying it out in a greased or buttered pan (kind of ruins the fudge, IMO), so I tear off a piece of parchment big enough to push it down into my pan and pleat it out up the sides so that the whole thing is covered.

When it's time to cut the fudge, I just pick up the sides of the parchment that come up over the sides of the pan and move it to a cutting surface. That makes it a lot easier to cut and you have nice, pristine fudge that's not all greasy on the outside, but doesn't get stuck to the pan either.

No need to fry up bacon on the stove when there is Oscar Meyer thick-cut bacon. That is delicious! The trick is not to over-microwave it.

I bake a pound at a time in the oven at 400 degrees for 40 minutes on a cooling rack placed in a jelly roll pan. I keep it in a Lock and Lock container and have cooked bacon when I want it. Great on grilled cheese sandwiches, BLT's and of course breakfast.
