Morning...(almost noon),

Getting a slow start to the day. The sun is shinning. Didn't see it yesterday which was gloomy and cloud covered sky.

Made breakfast but that is about it so far. Took clothes out of dryer to fold, making the bed, just the usual.

Hope all is well with everyone. Will post more later.

Scalloped potatoes for lunch. This really veers off my regular food, but it's lovely cool & dreary today, and they were so good!

I didn't bother to layer (or peel). I just threw everything into a large bowl to combine: golden potato slices, chopped sweet onion (that was peeled), cream of celery rinsed out w/ sherry, melted butter & seasonings.

Preheated my glass dish as the oven was preheating. Threw everything in the dish; doused w/ Half & Half & put a tin foil lid on top. 400 degrees - 1 hour.

Oh, those scalloped potatoes sound so good! Wish I was there. I would have some for sure.

This morning I fired up the crock pot (again this week) and have a mesquite seasoned pork tenderloin in. I added some diced onions & yellow, red, & green sliced peppers with it. I added some of VERY FAV Sweet Baby Ray's bbq sauce. I'm turning this into pulled pork sandwiches for dinner.

Hubby is making a yummy fresh green bean dish - and NO IT IS NOT green bean casserole!!!

Earlier this week in the crock I made country pork ribs in broth of cut up garden fresh tomatoes, one 8oz can tomato sauce w/a little water. For dinner we had mashed potatoes, the ribs and a fabo tomato gravy with yes more of those fresh green beans. Hubby brought a ton home 2 wks ago that he cleaned, blanched, & froze.

Harpa, I agree with Soushi, those potatoes sure sound yummy. I love good potatoes fixed almost any way. Pink dogwood, your food also sounds soooooo good. I envy anyone who can eat garden tomatoes. VERY HARD to find out here in Sou Cal and as a result I will NOT buy nor eat grocery store tomatoes. They are terrible. Was born and raised in the South and I know what good eating is. While I have managed to find - from time to time - some good home grown tomatoes, this summer it has been very difficult. The elderly gentleman in Beaumont obviously has stopped growing them - worse yet I hope he is ok and nothing has happened to him. I sure miss his tomatoes. I keep driving by hoping to see him around but never do.

Tonight the kids are having a Bistro salad - a pre-packaged salad mix. Have NO CLUE what it is but am sure they will like it - they do enjoy salads. NO COOKING AT THIS HOUSE.

Got up to 105 today and they say tomorrow and Monday will be worse. Weather in Sou Cal is no longer heavenly - hasn't been for some years now. Humidity is again the big culprit. I had to zip to the store and the kids did NOT want to go. That is rare as they always hope I will buy ice cream or something - not this time. LOL.

Very quiet around here - no one traveling about and certainly no one outside. Super quiet for a Saturday.

Church tomorrow and then a luau potluck at Mary's mobile home park. Nope, am not doing anything Hawaiian - I am just going for the food.

Cheesy Italian Chicken Pot Pie

Ingredients
1 1/2 cups chopped or shredded cooked chicken
2 cups shredded mozzarella cheese (divided)
1/3 cup grated Parmesan cheese
1/2 tsp salt
1/2 tsp dried oregano leaves
1/2 tsp dried basil leaves
1/2 tsp garlic powder
1 (8 oz) can tomato sauce
1/2 cup Bisquick™ mix
1 cup milk
1/4 teaspoon pepper
2 eggs
Directions

Heat oven to 400Âş. Spray bottom and sides of pie plate with Pam. Mix chicken, 1/2 cup of the mozzarella cheese, the Parmesan cheese, salt, oregano, basil, garlic powder and tomato sauce. Spoon evenly into pie plate. In a separate bowl, stir bisquick, milk, pepper and eggs until well blended. Pour over chicken mixture. Bake uncovered for 35 minutes. Sprinkle with remaining mozzarella cheese. Bake 5 more minutes. Allow to rest for 10 minutes before slicing. Enjoy!

had these cookies bought at amish store, oh so good. This looks like what I think is the recipe.

<h1>Coconut and Oatmeal Drop Cookies</h1>

48 servings
<h6>Ingredients</h6>
  • 1 cup (2 sticks) butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 cups all-purpose flour
  • 2 -1/2 cups shredded coconut
  • 1 cup chopped walnuts or pecans
  • 2 cups old-fashioned oatmeal
<h6>Directions</h6>

Heat oven to 350 degrees. Grease 2 large cookie sheets. Cream butter and sugars in mixer until light and fluffy. Add eggs, beat together. Add vanilla, baking powder and baking soda. Then add the flour. Mix until well combined. Stir in coconut and nuts. Mix in oatmeal.

Drop on greased cookie sheets by the tsp., spacing about 1/2 inch apart. Bake 12 to 15 minutes, just until the edges begin to brown. Transfer to a wire rack to cool.
