Can anyone post a recipe for chicken & rice that uses onion soup mix? So hungry for this but can't find my recipe. I know the ingredients but don't remember the measurements.

Is this it?

 

1 can cream of mushroom soup

1 soup can milk

3/4 cup uncooked regular rice

1 4oz can mushroom stems and pieces

1 envelope onion soup mix

2 chicken beasts, halved

 

heat oven to 350

 

mix mushroom soup and milk. Reserve 1/2 cup of the mixture.  Mix remaining soup mixture, the rice, mushrooms, (with liquid) and half the onion soup mix.

 

Pour into ungreased baking dis, 11 1/2 by 7 1/2 by 1 1/2 inches.  Place chicken on top.  Pour reserved soup mixture over chicken.  Sprinkle with remaining onion soup mix.  Cover with foil. Bake 1 hour.  Uncover and bake 15 min longer.

This recipe is from those 1971 recipe cards sets.  The Betty Crocker Recipe Card Library.  This is the first meal I ever cooked for Mr4kitties.

@cookinfreak If all else fails maybe the old Chicken Rice Roger recipe from the Peg Bracken "I Hate to Cookbook"?  It can be found online.  I use dehydated onions when in a hurry vs sauteing raw onions, I also add Italian seasoning.

Could this be it:

 

   Old School No Peek Chicken and Rice

(Remember no peeking as the tightly foiled dish locks in all the steam to cook the chicken and rice)

 

  • 2 c long grain white rice
  • â–˘10.5 oz can cream of mushroom soup (1 can)
  • â–˘10.5 oz can cream of chicken soup (1 can)
  • â–˘1 c. chicken broth
  • â–˘4 boneless chicken breasts
  • â–˘1 oz package Lipton onion soup mix (1 package)
  • Preheat the oven to 350 degrees F.
  • Grease a 9 x 13 inch baking dish with non-stick spray and set aside.
  • In a medium sized bowl combine the white rice, cream of mushroom and chicken soup and chicken broth. Mix until combined. Pour into the prepared baking dish.
  • Place chicken breasts on top of the rice mixture. Sprinkle the onion soup mix on top of the casserole evenly. Cover the baking dish with aluminum foil and place in a preheated oven.
  • Bake for 1 hour and 15 minutes or until the chicken reaches an internal temperature of 165 degrees F.

I googled it, and so many came up, I couldn't pick just one! Many have five stars. Check them out. If I recall correctly, using Lipton's soup mix for the chicken-rice casserole, and others, was always extremely popular. Someone here posted the simple Lipton's rice side dish not too long ago, and it was VERY good.
