Help with Thanksgiving menu for person on a restricted diet

Hello everyone!

If I'm going to get help with recipes, my guess is that I'll get the best advice right here!

I have Interstitial Cystitis (IC/PBS). It's not an infection, just a relatively rare disease, where part of the lining of the bladder tears. So, in order to control pain, I've been closely following "the" IC diet. Yea! I'm in remission, so can have some spices and foods that I couldn't have last year, at this time.

One food I'd really like to have, this Thursday, is sweet potato pie. (I can't have pumpkin.)

I have to use only fresh ingredients, so will need to make the filling from scratch.

Spices that can be used to make a dessert include: allspice, almond extract, vanilla extract, salt in small quantites, cinnamon - in small quantities - ginger, lemon extract, nutmeg, orange extract.

I'm sure that I must be able to make something with taste, using some of the above spices, but I am not good at substituting one ingredient for another.

A very kind chef has come up with recipes that IC/PBS patients can eat, example: a "blueberry sauce" to be used in place of cranberry sauce. So, I'm happy with what I can have for dinner.

Any help would be very much appreciated.
