Tomato scooped out and filled with a rice/bread/cheese stuffing mix, topped with bread crumbs and put under the broiler.
Salad of marinated cauliflower florets, broccoli florets, and olives oil and vinegar dressing with nice fresh herbs.

Is your luncheon for women only? If so, we like finger food.
How about a very colorful vegetable tray? I am absolutely addicted to mini red, orange and yellow peppers with Jimmy's Vegetable Dill Dip and eat them every day. For guests I add sugar snap or snow peas and sliced english cucumbers.
Then I would suggest having a platter of Dublinger and white cheddar cheese with red grapes.

With chicken salad (hot or cold), I like to serve green beans, chilled grapes or pineapple, a nice dinner roll, cake or a pie for dessert.

I just had a luncheon in early January and had chicken salad with mini croissants!
With it, I made a delicious cream of broccoli soup which really hit the spot since it was a cold day!
I also served a veggie tray with dill dip and a tray of deviled eggs. It was very enjoyable!

I'd love to have roasted veggie kabobs with the chicken salad. Just about any kind of vegetables could be roasted. Toss the pieces with olive oil, salt and pepper, put them on skewers and roast. If they are hard veggies like brussels sprouts, you can do the first half of the roasting covered with foil to make sure they get soft enough. Eggplant would be good, and zucchini.

How about marinated whole mushrooms? They are fabulous! Sometimes you can find them in a grocery store at their salad/pickle bar, or you can make them yourself. Just buy whole mushrooms, wash them, and marinate them in teriyaki, or Italian dressing or oil & vinegar
And then also maybe a molded jell-o salad

I like to eat vegetables at every meal, so a salad or broccoli on the side would be perfect, preferably something that isn't already loaded with mayo as I assume your chicken salad has plenty of that in it. With the chicken salad and croissants, I would definitely want something that isn't loaded with fat (like cheese). Many of us try to eat healthy, so it would be nice to have some options that are lower fat. A nice vegetable soup would be lovely as well, especially if you live somewhere cold. This winter has been brutal so far!

This would be my choice too. I think bibb lettuce would be perfect.
