This is a favorite side at a local hole in the wall in Show Low where I live (owner was kind enough to share):
Easy Peasy Chili Cheesy Rice
Ingredients
2 cups rice
1/2 cup sour cream
1 cup green onions
1 (4-oz.) can chopped green chilies
1 cup shredded cheddar
1/2 teaspoon cayenne pepper
1/2 cup parmesan cheese
Butter (for greasing dish)
Directions
Preheat oven to 450 degrees.
Cook rice in advance, as listed on package, and mix with sour cream,
green onions, chiles, cheddar, and part of the cayenne.
Butter a casserole dish, and sprinkle parmesan on the bottom.
Spread rice mixture into the dish, sprinkle with more parmesan and
remaining cayenne, and add a pat of butter on the top. Bake for 20
minutes.
Served it last nite and everybody wanted the recipe.
