Now with arthritis in my left hand, holding a vegetable to use a peeler is quite awkward. 

 

DH brought home some "Resers Main Street Bistro" frozen prepared potatoes and they are very good and offer quite a variety.  I pick them up when they're on special.  I haven't found a bad one yet!

 

Some days another microwaved potato just lacks it.  I'm not fond of them.

Those look yummy.

Maybe you could use one of these electric Starfrit peelers. Without this thing I cannot peel anything. This thing is the bomb. Reviews are really good. Have had mine for many years.

I eat the peels.   (Yeah, I scrub them first!)

Once over the winter while at Costco I tried a sample of scalloped potatoes.  Boy, were they good! 

 

I was so tempted to buy a package and even had one in my hand about to go into the cart and I suddenly got a moment of strength and put it back....Trying to keep with low carb eating.

I have used these and they are very good.  You can freeze them as well.  I also purchase their mashed potatoes that are sold at Costco.  The package is large so sometimes I just put the whole container in the freezer.  When I defrost it overnight in the refrigerator, I will put it into a casserole dish and cover the top with shredded cheddar cheese and bake them,  This bakes up very nicely. You can also serve it as a loaded potato casserole if you put bacon pieces, green onions and sour cream on the top after baking. It is very good- even for company.  And no one would know if was a ready prepared product.

I occasionally buy the cold, prepackaged potato salad from that brand, Reser's. It is very good!  Next time I am at the store, I will look to see if they carry the  baked items.  I bet their scalloped potatoes are delicious.

Around the holidays, I had so much going on with company coming and no time to do everything, so I purchased two of these at Costco.  Put them into my own larger casserole dish, baked and served them.  They were delicious!  When they taste this good, it not worth the time or effort to try and make them yourself, especially having to cut the potatoes so uniformly.

@SilleeMeeI wouldn't mind having that for apples! I hardly ever peel my potatoes, just scrub and use them.

 

I remember my uncle had this honking potato peeler in his cellar. He owned a restaurant and was also a caterer. Sat on the floor. It was huge for industrial use!

Peeling apples, using that Starfrit, is mainly what I bought it for. Works great for that.
