I made this today using Splenda & thought it would be good for those looking for diabetic deserts. It is really good. Hubby liked.

STRAWBERRY CREAM PIE

1 Cup Sugar (I used Splenda)

6 Tbsp Cornstarch

1/2 tsp Salt

2 1/2 Cups Milk, scalded (I used 2 %)

2 Slightly Beaten Eggs

3 Tbsp Butter

1/2 tsp Vanilla

1 Pint Srawberries (I used fresh)

1 Pint Whipping Cream

Mix first 3 ingredients, then add scalded milk (gradually & stirring constantly so it won't get lumpy). Cook until thick, stirring frequently so milk won't burn. Then, add eggs. Cook 5 more minutes, add vanilla & butter. Let the custard cool. Then, put in cooked pie crust. Slice strawberries & place on top of custard. Then add whipping cream (I whipped it up with hand mixer). Refrigerate until cold.
