Meh.  A lot of crust, not much chicken, and mostly green peas and corn.  Starch and starch which is cheap!!! Not doing that again!

I have Tara McConnell's (Temptations) Hot Recipes in Cool Dishes cookbook and have been making her recipe Chicken and Biscuits Casserole for years.  My husband, who prefers not to eat chicken and really doesn't like chicken pot pie loves this.  The only thing I do differently is cook the biscuits separate and not on top.  When cooking them on top of the pot pie mixture, the bottoms don't cook all the way.

So much chopping and boiling and rolling!

 

i use the Pioneer Woman recipe with already cooked leftover cooked chicken or turkey.  Only do a top crust. Dig in and serve with a big spoon.

 

i don't see how you avoid all the fat sugar and starch even when you make from scratch.  It's a PIE.

@tansy    I've never asked but I've bought extras and frozen them myself.  Just slip in a zip lock bag.

I like the Marie Callenders Turkey Pot Pies.   They have two sizes.  The larger one is just too large, plus it's like 1,000 calories.  But I like the smaller one that's 500+ cal and it's just enough to eat.

 

One thing I always liked about those is that they still have top crust AND bottom crust.

 

Plus, they cook up really nicely in the microwave.  The crust browns and everything.
