Fresh Market Chicken Pot Pie-NO!

I was in a hurry all week while DH was on a Harley trip for 10 days.

I got us a chichen pot pie for dinner.  Big mistake.  A few bites of chicken, green peas and crust!  Why not just call it a carbs quest!!!  Grrr.

Much better and healthy!!!

Chicken Pan Pie

6 chicken breasts

32 oz Chicken broth

1 can Cream Of Chicken soup

2 tsp  salt

2 large ribs celery, chopped

5 carrots, thinly sliced

1 medium onion, chopped

1 cup frozen small green peas, thawed

1/2 stick butter

1/3 C plain flour

Cook chicken breasts gently to retain liquid with celery, carrots, and peas in salted chicken broth removing scum.

Cool chicken enough to break into bite sized pieces, return to broth.

Melt margarine in pan.

Stir in flour and chicken soup.

Gradually add to hot vegetable mixture.

Pour into greased 9 x 13 casserole

Crust

2 C flour

1 tsp salt

1/2 C oil

1/4 C milk

Mix in small bowl.

Roll out between two pieces of waxed paper, the size of your casserole.

Place dough side down over casserole and peel off top sheet of waxed paper.

Cut crust to vent.

Bake 400 degrees for 30 minutes.

If you don't want do do the crust, just use Pillsbury's refrigrated crust!!!

Always say I'm going to make my own and then I don't get around to it. I need to try this. I wish pot pies had some corn in them which is another reason to make my own.

@AuntG

Fesh Market has all the carbs one could want.  Peas, corn, and crust.  It's a carb fest!  No more for me!

the huge pot pie from SAMS CLUB is a huge favorite in our home. i brush the lattice crust with some melted butter and sprinkle it with  sweet paprika.

the individial ones from schwans home delivery are also very good and very convenient to take out of the freezer and pop in the oven. schwans also makes a chicken bake which is basically a larger pot pie with crust only on the top.

I love the individual pot pies from KFC.  They have the most delicious crust, lots of chicken.

I'm a big fan of Marie Callendar's Pub Style Chicken Pot Pies.  They don't come in a dish.  Sadly, I can't find them in my area anymore.  I checked with th company and they still make them.

@Kachina624 the KFC chicken pot pies used to be my favorite too before discovering th Marie Callendar's Pub Style ones.  I love the puff pastry crust too.

All Chicken Pot Pies  are not created equal. Some can be very good, a comfort food treat. Others not so much. Considering it's an entree that is not often eaten, I don't mind   buying a premade pie.
