I bought a package of fresh portobello mushrooms at Costco yesterday. I plan to make mushroom soup, but not for awhile. I cut them into nice slices and sauteed the mushrooms in olive oil this morning.
Can I know freeze them? I thought about putting them in a freezer bag and freezing them til I'm ready to make the soup. They will be pureed in a blender when put into the soup, so there is no problem with them having to maintain their shape.

At one time, Schwan's sold these....don't know why they discontinued them, the reviews were good.

Mushrooms are mostly water and if you freeze them raw, they tend to become mushy. This consistency works okay in soups, casseroles, and stews, but it's not the best result you can achieve. Can you dehydrate them, either in a food dehydrator or in your oven? They would last better because then you can rehydrate them before processing. I dehydrated mushrooms last fall and then threw them in the freezer that way. When I rehydrated them for soup, they were delicious.

Thanks everyone! Whew...glad I decided to saute them!
I now have them in a double freezer zip bag and will put them in the freezer. I thought maybe I'd have to make the soup and then freeze THAT - have done that before. But just didn't want to take the time right now to make soup....especially when it's 98 degrees outside...LOL
