Does anyone have the recipe for Forgotten Cookies? When I was in jr. high, my best friend's mom made these for us every time we had a sleepover. I know they were made with egg whites and she put choc chips in them and something about heating up the oven and then turning it off when you put them in and "forgetting" them overnight. We lost touch over the years and she doesn't have FB. I would love to have this recipe if anyone out there can help me. I remember them being so good Smiley Happy

Hello there. Here are 2 recipes, which as Scotnovel said - I found by googling. The 1st recipe is pretty direct, & may be what you're looking for.

The name "Forgotten Cookies" comes from leaving these cookies to bake in the oven overnight after it's been turned off.

Ingredients:

2 egg whites, at room temperature

2/3 cup sugar

pinch salt

1 teaspoon vanilla

1 cup finely chopped pecans

1 cup chocolate chips

Preparation:

Preheat oven to 350°. Beat egg whites until foamy. Gradually add sugar and continue beating until they hold stiff peaks. Add salt and vanilla. Stir well. Stir in pecans and chocolate chips. Cover cookie sheet with foil and grease with butter or margarine. Drop by teaspoonfuls onto the foil. Put in oven then turn the oven off. Leave overnight in oven with door closed.

Forgotten Cookies - Christmas Kiss Cookies

Ingredients

3 large egg whites, at room temperature

Pinch of kosher salt

1/4 teaspoon of cream of tartar

1/3 cup of granulated sugar

1/3 cup of powdered sugar

1/8 teaspoon of peppermint extract

1/2 cup of mini chocolate chips

1/2 cup of minced pecans

6 to 12 drops of red food coloring, optional

Instructions

Preheat oven to 200 degrees F. Line two baking sheets with parchment paper; set aside. Beat egg whites with a mixer on medium low until frothy. Add salt and cream of tartar and increase speed to medium high. Add the granulated sugar a little at a time until full incorporated, continually beating until mixture stiffens.

Add the powdered sugar and peppermint extract and increase to high, beating until still peaks form. Remove and gently fold in the chocolate chips and pecans until blended in. Dot the meringue with food coloring, and spoon into a piping bag with 1/2 inch tip, or gently swirl in the food coloring and drop by tiny teaspoons onto the parchment paper. You want these meringues to be very small, bite-sized drops.

Place both trays into the oven and let bake at 200 degrees F for 2 hours. Turn oven off, turn oven light on, and leave the meringues in the oven another hour, or overnight, to dry completely and crisp up. Do not open the oven. Yield depends on how large you drop them, but this recipe can make up to 5 dozen, when piped tiny, at about 1 inch round.

~Cook's Notes~

Old School: Preheat oven to 350 degrees F. When you have all of the cookies on the trays, turn the oven off and turn the oven light on. Place the trays into the oven and leave them overnight, or up to 12 hours to set and dry until crisp. Do not open the oven. I have heard all of my life not to not attempt to make candy or meringues on a rainy, damp day, or if rain is forecast, because it will not set. While you may have more success with the oven method with rain, use this overnight method only when the skies are clear and no rain is in the forecast.

Tip: Blend in food coloring to tint these for special occasions, such as Christmas and Easter, or for bridal and baby showers, receptions and teas.

For Chocolate Chip Pecan Meringues: Substitute 1/2 teaspoon of vanilla extract for the peppermint, and add in 1 cup of finely chopped pecan, along with the chocolate chips. Omit the food coloring.

i will post my tried and true recipe a bit later. we dont use nuts in ours (but you could, of course). i also like mine to have peppermint extract and the mini chocolate chips. i usually make them during the holidays and color them green and pink.

we call them overnight cookies.

Here's the recipe I've used for decades. My DD still loves these and wants me to make them for her every Christmas.

I find these keep well in a metal tin. They can be made days ahead of time.

Forgotten Cookies

Preheat oven to 350.

2 egg whites

2/3 cup sugar

1/4 teaspoon Cream of Tartar

1 cup chopped pecans

1 cup chocolate chips (6 ounce bag)

Combine egg whites with cream of tartar in small mixing bowl. Beat with mixer (high speed – look on mixer for correct speed for beating egg whites) until nearly stiff.

Gradually add sugar and beat until very stiff.

Add nuts and chocolate chips by gently folding into egg whites, using a spatula. Drop by teaspoon on lightly greased cookie sheet (or line sheet with parchment paper).

Place cookie sheet in oven (put in lower part of oven). Immediately turn oven off. Leave cookies in closed oven overnight. Remove in morning.

It sounds like the ones my grandma used to make for me, she called them NO BAKE COOKIES and I still make them, sometimes with chocolate chips and sometimes without, either way they are really good, the hardest part is the waiting. Remember, humidity will affect how they turn out.

NO BAKE COOKIES

2 Egg Whites beaten very, very stiff with a speck of salt.

Add 1/8 teaspoon Cream of Tartar. Keep Beating.

Add 3/4 Cup of Sugar gradually with 1 teaspoon Vanilla.

Fold in 1 package (6 ounces) Chocolate Chips.

Put batter 1 teaspoon at a time on a foil lined cookie sheet. Then into oven. Heat oven to 300 degrees, turn off and leave in oven over night or at least 7 hours. Do not open the oven door until all the time has passed. Store in an airtight container.

Enjoy!

here is my tried and true from a beaten up index card that is probably 40+ years old. LOL it may match someone elses, but here you go.

grease cookie sheets with butter

pre-heat oven to 375 degrees

food colors

1 pkg of mint bits or chocolate bits (if i use chocolate bits i prefer the minis, if not, regular size will do....and i will add a touch of peppermint extract if i dont use the mint bits)

2 egg whites, beaten

2/3 cup sugar

1/8 tsp cream of tartar

beat egg whites until stiff. gradually add sugar. beat well. add cream of tartar. beat again. divide into bowls to add food coloring as desired. add a drop at a time to get the desired color and gently mix. drop from teaspoons onto the greased cookies sheets. put in preheated oven. turn OFF heat. do not open oven for at least six hours.

i make these a lot during the holidays, but they are also great for a baby shower. you can color them pink and blue. they can be served or wrapped up to be given as party favors.
