Re: For a Vegetarian Meatloaf

That recipe from Fat Free Vegan Kitchen sounds really good, I'm going to make that and hopefully it will replace Tofurkey at Thanksgiving. We are not vegetarian or vegan by any stretch of the imagination, but I'm always looking to cook healthier.

Here's a recipe using walnuts...makes great sandwiches the day after

http://www.foodnetwork.com/recipes/walnut-loaf-recipe.html

I tweaked it, of course! I used one large white onion, two celery ribs, half a red pepper (not green) and seasoned with celery seed and poultry seasoning. Just a bit! And used a small can of tomato sauce instead of tomatoes.

There are a lot of good recipes on the Fat Free Vegan site...I add a little more soy sauce to the recipe for the loaf...and cook it a little longer than they say...let it set before you cut into it..DW

Thanks for your ideas here! As it turns out, we're just going to get veg. and meat pizzas instead. Birthday girls's request today! So tomorrow no cooking. She gets ribs tonight!
