My grandparents had a fig tree in their backyard and always made fig preserves. Granddaddy would pick the ripe figs, wash them and put them in a big pot. He layered the whole figs with sugar and let it set overnight. The next morning he would put it on the stove to cook on low until the syrup was thick and golden brown in color. He wouldn't stir the figs, as that broke them all up. He like to can them whole with the syrup. I remember one day my aunt went in the kitchen and stirred the figs. Granddaddy was so upset with her!!! My granny would make me "pan toast", slice of bread with butter on it cooked in a cast iron skillet. The pan toast was so good with the fig preserve syrup on it.

I got a fig tree shoot off of their fig tree and it is growing in my backyard. It has some figs on it waiting to be made into fig preserves. Can't wait to make some pan toast with syrup. Smiley Happy Smiley Happy Smiley Happy
