We are getting squash from our garden. I have not tried this recipe, but have made them before with a similar recipe.

Squash Patties

2 c grated raw squash

1/2 c grated onion

6 T flour

1 t salt

1 egg

Mix all ingredients and spoon into hot shortening, kinda flatten the patty. Cook until brown on each side.

I had a recipe for 'mock crab cakes'. Maybe someone can Google it, but it used grated zucchini, and Old Bay seasoning. They were good. I'll have to try and find it.

Yes, my Mom made them all the time, from yellow and green squash, yum with a little sour cream.

I've never made these. Sound wonderful. However, I grew up on fried squash. My mom (and I) would slice squash, dip it in egg and flour, and fry it till it was golden on both sides. Oh, it was so good. I couldn't fry enough for my son.

Made similar with zucchini... I love anything fried, I guess!!!!!!

I have done this also with zucchini and with yams even though I try to avoid frying...

What a great recipe. I will probably bake them at 350 degrees like I do my salmon patties. That way we can cut down on the fat. I also have been doing a lot of stuffed mushrooms lately. I think I might try putting some of this mix in the mushroom caps and mixing a little shredded cheese into the mix. Num, num!

Love those mock crab cakes with zucchini. I make them a lot when the harvest comes in.
