I like pickling cucumbers the best.  I'll do the english as an alternate.

I also prefer the old fashioned straight 8 cucumbers.  However, I always pick them when they're really small.  I don't like them when they get too big and seedy.😃❤️

Cucumbers must be picked every day when the vines are producing well, and should never be allowed to get huge enough that the outside skin is a lighter green with white, or yellow.  

 

I am shocked at gardeners who proudly show off a HUGE cucumber like it's a grand prize winner.  My brothers and I were in the garden twice a day pulling cucumbers in order to get them at the size our family liked for eating and pickling.  


You're exactly right!  We always pick them when they're small too.  They don't even have seeds like this.  That's the only way to eat them.😃❤️

English for us as well. If we had a garden I would use the garden variety but I hate buying them because they are waxed so heavily at the grocers.

@Imaoldhippie- I don't buy the regular cucumbers - too many seeds and they tend to come up on me.  The English ones are okay but I ususally buy the Persian Cukes.  Good taste, you don't have to peel them if you don't want to and mostly seedless.  I see a lot of cooks on the Food Network shows use them also.  They are smaller than the English and a little bigger than pickling cukes.

@amyb @Imaoldhippie    Those small pickling cucumbers are my favorite , too.

 

           I use them in salads and just slice one up to eat plain or to dip into hummus.

 

           I save the pickle juice from Claussen pickles and slice a couple of the pickling cucumbers and put them in the jar. A couple of days in the fridge and they are so good.

For the longest time we only purchased Persian cukes, then my husband decided he preferred English cukes, so that is what we currently buy. We never purchase the garden variety.

 

I love mixing vinegar, sugar substitute, salt and pepper with sliced onions and cukes. For us, they are ready to eat in an hour. I also love adding cucumbers to my water. It's such a refreshing drink in the summer.
