Mac, in this case, it would be time for old cast iron pans!

I have old iron that is so well seasoned that you could make crepes in them. Eggs are no problem.

Oh ladies what I wouldn't give for an old, well seasoned pan . . . I have tried so many times with so many different methods that clearly I never got the hang of so now I use ceramic cast iron but I do have real cast iron envy! . . . Smiley Happy

mtc, I found the best way to season a cast iron skillet is to cook bacon in it.

 

The first cast iron skillets I bought were a 3 piece set from Lodge. The little one, I made bacon in it. The medium and large ones, I seasoned and baked for over two months.

 

The little 6 inch skillet I made the bacon in was black and nothing stuck to it!

 

I got rid of all of them when I got my LC collection. If I were to get another one, I would season it with bacon. :-)

I think that was true long ago, but today's bacon sometimes has so much sugar and salt water in it that is just makes a sticky mess in the pan--new OR seasoned.  Maybe just try melting some pork fat from a pork roast and heating it for a little while.

I think my problem is because my regular oven is broken and even an 8 inch skillet doesn't fit in there I am having such a hard time getting the skillets to season properly.

 

I do have the small, 6 inch Lodge skillet so maybe I'll take that out and see if I can take another run at it . . . thanks HB!

Have fun, mtc! While you're making bacon, try adding butter and a sliced potato. See how it turns out. I think you will be pleasantly surprised!

I use my lodge cast iron for eggs (use other pans too) but never had a problem cooking eggs on the Lodge.
