I was browsing the Incredible Egg site for recipes and found this tip:
Avoid cast iron. Eggs scrambled in a cast iron skillet can turn a greenish shade. This harmless but unappealing color change is the result of a chemical reaction between iron in the pan and sulfur in egg whites.
This applies to raw cast iron, not enameled. The tips are after the recipe.

only washable Teflon for me. who wants to wash or just rinse a big ol cast iron pan for a egg or 2.

I've never had that happen. Still use cast iron for camping and cook eggs in them.

LOL, they make pretty small cast iron pans.

debic, that happened to me when I scrambled eggs in a new, unseasoned Lodge.
Sharke, like debic said, they come in all sizes. My favorite one, before I got LC, was a 6 inch Lodge.

yeah, I like to bake meat in them, looks like eggs would stick something awful.

I only prepare eggs in Curtis Stone's fry pans. My omelltes come out so perfectly they belong on the cover of a magazine.

If cast iron pans are seasoned, food does not stick & that includes eggs. Anywho, I always spray the bottom of my cast iron fry pans w/PAM.
My cast iron pans are older than dirt!

I'm sorry, but coming from a lot of generations of cast iron pan users, I have never heard of or seen that happening w/eggs or any other food for that matter.
If it is, then it is time for some new cast iron pans.
