I find in the summer I am making a pasta salad weekly with the fresh tomatoes, cucs and basil from our garden. To help make the prep easier, I use the mirepoix (pre-chopped carrots, celery and onions) from Trader Joe's. I add feta cheese and pitted black olives. I make an easy and tasty dressing with red wine vinegar, olive oil, seasonings, salt and pepper, mustard and chopped garlic that I whisk together. I just made another bash...can't wait until dinner!

This sounds so good! Although I would have to substitute another cheese for the feta,since I'm not a fan of it.

That Mirepoix is a well kept secret! I use it as a base for my salmon salad, a base for my court boullion when I poach fish or steam shellfish. I also buy an extra container or two to use as a base for my stock.
