We will only be four (immediate family) for Easter dinner.  This year I decided, since I'm the one always doing the cooking for all the holidays, that I would forego the large traditional meal and make it more relaxed (and easier for me to enjoy the holiday and meal.)   

 

Deviled eggs  - (always a must have) 

Italian Antipasto platter  - (easy to assemble it the night before)

Lemon Vinaigrette mixed greens salad

Pesto Shrimp Asparagus Pasta   - (Costco's jar pesto, the best!)

Rustic Tuscan bread/butter

Lemon Curd Trifle  - (prepared and refrigerated the day before)

 

Buon Appetito!

Me cooking will be dependent on who is here to eat and I won't know that until Wednesday or Thursday before that Sunday.  I have a large turkey breast waiting in the freezer and everything else I will need is already here.

Thanks for the idea. The menu sounds so good. I am going to make Glazed Sweet Potatoes. Already bought sweet potatoes.

Easter is one of my fave holidays---not sure if there will be a family dinner yet--but I always plan my own these days, just in case,  --seems like covid always has the last say---but DD and I will have salmon, lemon garlic risotto, fresh aparagas, maybe strawberries and some sort of dessert. Nothing too fancy but delicious !! Maybe a perseco and orange juice drinkie!!

Probably the same as last year (and year before). Might change the desserts though.

Augratin potatoes
Corn
Glazed carrots
Ambrosia
Apple Sauce
Fresh rolls

 

Had the desserts below last year. (May switch to something else. Looking at dessert recipes now).

This sounds delicious and close to what I make except for the roasted squash and millionaire pie. I have to make mac and cheese for the grands and candied sweet potatoes for my sons. 😅

Would you mind sharing your recipe  for the millionaire pie...please!

@Starpolisher I don't make the origonal Millionaires Pie which is all whipped cream!

An easier recipe came around which became the most made.

 

 

 

 

 

 

 

                                   Millionaire Pie

 

 

 1 can crushed pineapple well drained

 

 1 small can well drained mandarin orange, cut in half

 

½ C of green grapes cut in half

 

½ C chopped pecans

10 Lightly toasted whole pecans for garnish

 

(Your oven is also a great tool for toasting pecans. For this method, preheat an oven to 350 degrees F. Spread the nuts evenly onto a rimmed baking sheet and bake until they begin to brown and become aromatic, making sure to toss halfway through, 7 to 10 minutes. Remove from the oven and let cool.Oct 22, 2021)
 6 drained cherries with stems, or extra chopped pecans to garnish.

 

(One fruit may be replaced with grated coconut of the same measurement).

 

Juice of 1 fresh lemon

 

1 can sweetened condensed milk like Eaglebrand.

 

1 8oz cool whip, thawed.

 

 

In large bowl mix lemon juice with sweetened condensed milk.

 

Mix in pineapple, mandarin oranges, and chopped pecans.

 

Gently fold in thawed cool whip.

 

Pour into graham cracker crust.

 

Add toasted pecans 

 

Cover.  Chill for at least 5-6 hours.

 

Garnish before serving.

@ECBG  This sounds delicious and like it would make a big pie.  Would it fit in a store bought g. cracker crust?  I want to make it, but not bother to make my own crust.  Thanks!
