I did have leftovers from my Easter meal--DD and I had them the next night--I made a salmon wellington and risotto--put the leftover asparagus in the rice and sliced up more fresh fruit---I put the salmon in the airfryer to re heat and holy cow!!! did that ever turn out great---tasted even better ---I LOVE that airfryer!!!

I made some version of ham and eggs for DH and I the last two days.  Tomorrow it'll be a ham, broccoli, and cheese casserole, and finishing Friday with a chefs salad.  Whew, got a lot of mileage out of those leftovers this week. Good thing we like ham. I was just in the freezer to fetch myself an ice cream bar and spotted a corned beef brisket. I might have to make that next week.
