hRe: Easter Leftovers?

Have you ever had a "potato patty"?  They're very good.

For about  1 1/2 cups of leftover mased potatoes, add chopped or sauteed onion, abpout 1/3 C shreeded cheese if desired or sour cream, and a beaten egg.  Add a little milk to moisten if needed.

 

Form into patties, brown in a med warm skillet sprayed with olive oil.

That sounds tasty enough to make mashed potatoes just to "convert" them into patties!

I don't know if they're only "southern" but ideas for using leftovers are endless. 

 

I love them with Chive Dressing.

 

I take 1/2 16 oz sour cream

Add several TBSP mayo

And about 3 TBSP dried chives.  Chill 4 hours.

Keeps well.

@ECBG  I love"potato patties" and have made them in the past, although that pic you provided looks better than mine! Unfortunately, DH is on a low carb, no sugar diet, so he won't touch them; and I'm just not going to tempt him.  Smiley Frustrated

I try always to have leftovers from turkey, ham and meatloaf meals!

 

I make enough for a second dinner (sometimes a third) but add different fresh vegetables at each meal. I also always make extra potatoes as they are so versitile and can be served so many different ways.

 

I am always grateful for any and all food on the table.

What leftovers?  The ham and potatoes were divvied up among the adult children.

 

We do have most of a lemon pie and some banana cream pie. I might eat the lemon filling (hate the meringue).

 

Nobody goes away hungry in my house!

My left overs are half a ham that I didn't bake.....I only warmed up half of it.

 

I have some cheese cake and a chocolate cake and rice pudding and green salad without dressing.

 

I had a lot of food and most of it was gone in a flash.  My sister and my youngest son took some ham home for sandwiches.

 

I don't have enough of anything for another meal, but if anyone wants to drop by for coffee and dessert, I will be happy to have you.

One of my favorite things to do with leftover ham is to make a stuffed baked potato.  I bake a really large baking potato in a 425 degree oven for about 75-90 minutes.  When done, I split it in half an put butter on the potato flesh and mash it a bit.  Then I take small broccoli florets and poke them in a random fashion around the potato- using the stem of the broccoli pieces to poke into the potato flesh.  Then I take cubed leftover ham and scatter that around the broccoli florets, then scatter sliced raw mushrooms around and some diced green onions.  I put shredded cheddar cheese on the top and nuke in the microwave for a few minutes until the ingredients are heated, the broccoli softens and the cheese melts. Usually around 5 minutes or less.  This is really good- I have even served it to company at times.  It is a complete meal on one plate- protein, carbs, fats, and veggies. And very filling.  To me, it is comfort food.

I didn't host Easter this year but if I'm having guests for dinner, I always make a ton extra.  I want to make sure there is plenty for the meal, leftovers to eat on and leftovers to send home with anybody who would like them.  

 

These sorts of family dinners are normally a carry in.  I left my PB pie and leftover baked beans with my niece and came home with some ham and Buffalo Chicken Dip.

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.
