We use only butter.  We also keep it on the counter, covered, so that it's always spreadable.

Always have until a month ago. I was told my carotid endarterectomy surgery was probably because of it and cholesterol laden foods I ate throughout my lifetime. I used it in moderation too. Truthfully, I still think genetics are the real reason people have issues with butter.

for those of you who use a butter keeper, always keeping butter out, which one 

would you reccomend?  I'd like to try this so my butter is soft when I need it.

I cook with butter.  We like Land O Lakes light margarine as a daily dairy spread.

@Desert Lily  Yes, I use butter a lot. Both salted and unsalted. Both are healthy. I do not bake.

Your post was reminiscent of growing up in Little Italy. Sundays, 1:00 pm sharp, Sunday pasta dinner day. And the Italian bread was always buttered. 

 In the evening, our dinner was leftovers -meatballs with sauce, Italian bread and salad.
