There are some meals I cook to purposely have leftovers. Tonight I made meatloaf and the recipe calls for 2 lbs of meat...so I freeze part of raw meatloaf then bake off the rest. The amount I baked tonight will feed us two days...the amount in freezer is enough for one dinner and maybe a sandwich.
I don't mind leftovers and as others wrote, sometimes food tastes better on day 2. Lucky for me, hubby will eat leftovers.

So much simpler to live alone. I cook leftovers, when I cook. No way will I put forth major time and effort just for me for one meal. I could eat the same thing every night for a week and often do. I love to make a big casserole with protein, veggies and carbs, a one-dish meal. If I get tired of it, I freeze individual portions.

My husband always "forgets" that we have leftovers, leaving them for me to eat. Sometimes, that's a good thing, like when I make Red Beans & Rice. But, I can't eat spaghetti several days in a row, so I try to remember to vacuum seal and freeze most of the leftovers to have later.
Funny, he didn't have trouble eating leftovers of unknown age before we got married. I can't say he could tell whether it was bad, at least by smell, since he can't tell when the milk sours.
I do know a lady from church whose husband WILL NOT eat any leftovers. I don't know if they eat out a lot or what. It's difficult to cook meals every day for just 2 people. My husband does eat out a lot whereas I'll generally make a sandwich or cook a frozen meal a lot. I generally eat a larger lunch and then just have a snack or something for dinner.

@Kachina624 You brought back memories of my time in grad school where I'd make a different stew every Sunday night. For three years. Beef stew, chicken stew, fish stew, lamb stew, veal stew and chick pea stew at the end of the month.
Today I'm a no leftovers please person.

I never understood how anyone could not eat leftovers.
Only new fresh food all the time. If I make a roast, I know for the next week or so we will be eating roast. My dh loves leftovers. If I tire of eating them I will freeze them for another time.

@ECBG UGH I'm one of those whose husband will NOT eat leftovers. And yes a fresh meal every meal. I'm lucky he only does a yogurt with fruit in the morning. So I'm off the hook there. His lunches I make him bento boxes but dinner nope nope. It's annoying and a royal pain. Top it with the fact i hate to cook to begin with and he won't do any take out unless it will be his last meal on this earth and yeah it's tiresome. I don't eat dinner so I make just enough for him now. I learned to make myself a good lunch and don't eat any dinner. At least that way I don't need to make a bigger amount. If he has anything leftover he always says "you go yourself your lunch for tomorrow". I roll my eyes. FYI...he can't even make an egg.

Depends on what it is. Fish is something that I don't care for as a left over.
