Where I live it is almost impossible to find turkeys NOT frozen unless you order them ahead.

I always purchase fresh turkeys. You don't have to order them in advance either. They're found in abundance in all the meat cases at least where I live at. I won't even start with a frozen bird because it just takes too long for it to thaw out. I find fresh birds even taste better. It's well worth the extra money spent.

Same here. I bought mine on Tues and put them down in the cold room. Deep fried one and smoked the other. We like both so I buy small ones.

Debc--those look wonderful! Looks like a Big Green Egg smoker? How long did that one take?

Thanks, it was good. I cooked it slower than if I was just cooking it without smoke. Regularly it's 7 minutes a pound at 350 degrees. At 250 I smoked it for 5 hours.
