@terrier3 - DS goes to college very far from home and doesn't get home much. When he does, the first request he has is the recipe my family has about once a week:

 

Cottage Potatoes:

 

Instant mashed potatoes and ingredients needed to make them

1 - 1/2 Tbsp. dry minced onion

1 cup cream-style cottage cheese, large curd

 

Decreasing water by 1/2 cup, prepare potatoes for 4 according to directions on the package, but add onion to the boiling water before adding potatoes. With a fork, fold in cottage cheese. Turn into 1- quart casserole, dot with butter, sprinkle with paprika. Bake 30 minutes at 350 degrees.

 

This makes 4 servings. I always double the recipe for our family! Enjoy your son's visit! Smiley Happy

.             These sound delicious. I will surely try this recipe. I LOVE cottage cheese.

Asian cole slaw served icy cold!  Or a black bean and corn salad or salsa.
