I'm wondering if my dark cookie sheets are responsible for making my chocolate chip cookies hard and crispy. Any experience or thoughts?

It's possible. The dark pans cook faster. Recipes will usually have you lower the temp, or shorten the baking time. Are you sure they are not just overdone?

Hi, whenever I would use a dark cookie sheet my cookies burned on the bottom. I seldom use the dark ones anymore but when I do I line them with parchment paper and the cookies turn out perfectly. In fact, I line all my cookie sheets with parchment paper.

Thanks. I've been using the same recipe for over 50 years and the only difference is dark pans. I will use the parchment paper next time.

I forgot to mention the parchment. Everything bakes better with parchment.
If you have been making these for 50 years, you know your recipe. Definitely the pans!
