I cannot make cornbread. I have tried every recipe, so it has to be my technique. I am using an enamel coated cast iron 8" skillet. I have tried egg / no egg, adding flour to my corn meal mix, heating the oil in the skillet before added to the mix - every variation I can find. The trouble is my cornbread crumbles every time! The flavor is always ok. I bake at the recommended termperature on my corn meal mix. I think it is 400. Any ideas?????
